Pistachios

Afghan pistachios from Herat and Badghis are a completely different product to the large, pale Iranian or California varieties found in most stores. They are smaller, denser, more intensely coloured, and carry a flavour that unfolds in layers — first sweet, then earthy, then pleasantly bitter. We roast them in small batches at controlled temperatures to maximise flavour without destroying natural oils and nutrients. No artificial flavouring. No excess salt. No sulphur dioxide. Just the nut as nature designed it, revealed by fire.
